Good advice



To the Editor:

Regarding your series What to Eat on a Burning Planet: Mother Earth is, indeed, on fire, and calling our current situation a climate crisis is not hyperbole. I am thrilled to see this conversation elevated in The Times, since the need to alter our food choices is growing greater by the day.

Our system of cycling multiple pounds of plant foods through an animal to produce a pound of chicken, beef or pork, rather than simply eating the plants directly, greatly increases our carbon footprint.

The latest installment, “Seriously, You Should Eat More Beans,” by Bee Wilson (Opinion guest essay, Aug. 18), does a wonderful job of introducing readers to some of the healthiest, most protein-packed, most delicious and most inexpensive foods available.

Whether you are swapping lentils for lamb, pintos for pork, chickpeas for chicken or teriyaki tofu for tenderloin, let’s all strive to eat more beans and fewer beings.
